Orange Cake

True story: our furnace decided to stop blowing hot air this week and I was freezing. I ran across this recipe, had some time to spare, and knew boiling oranges for 1 1/2 hours would heat my kitchen just a little bit more. It did! I got that room up to 66 degrees!

Another true story: When I search for recipes one site I always go to is Elana’s Pantry. If you follow my blog you know how many recipes of hers I love! My valentine wish would be to get a little treat made by her in my mailbox!

Here’s a great one from her, the only difference I’ve made is the source and amount of sweetener. Enjoy!
2 organic oranges
4 pastured eggs
1/2 – 3/4 cup honey
2 cups almond flour
½ tsp coarse salt
1 tsp baking soda

Wash the oranges and boil them whole (peel and all) for 1 ½ hours, or until soft. Place whole oranges (peel and all) in a food processor and blend until smooth. Mix in eggs, honey, almond flour, salt and baking soda until well blended. Pour batter into a greased 9-Inch round cake pan. Bake at 375° for 45-50 minutes, until a knife stuck in the center comes out clean.

Cool and enjoy! I made some whipped cream with orange zest ontop for those dairy lovers in my family.
