Corned Beef Hash

Here is the best primal breakfast ever! And I’m not even kidding! I came across the idea of a hash from AndreAnna’s site (another one of my faves) and just threw together what I had in the fridge. Luckily we had a delicious corned beef dinner the night before, or else it would have been sausage hash– which I’ve made too, but the corned beef version was way better!

Ingredients
4 organic sweet potatoes
1 organic yellow onion
2 tablespoon extra virgin olive oil, divided
1 teaspoon paprika
1 garlic clove, minced
1 pound nitrate free corned beef, cooked
s & p to taste
4 pastured eggs

Grate the sweet potatoes, set aside. Sautee the onion in olive oil over medium heat until soft, add garlic, cook for 1 minute. Add paprika, corned beef, and salt and pepper, stir to combine, heat throughout, then remove from stove top.

On a large cookie sheet, coat the bottom with olive oil. Put sweet potatoes on the cookie sheet, add onion mixture, stir to combine and cook in a 350 degree oven until the potatoes are soft and a little crispy.

Meanwhile fry up some eggs and place ontop of the hash when finished cooking. I like the yolks nice and runny!
